Man'ooshé.....Mood = MiddleEast Pizza

The man'ooshé is as much a part of Middle eastern culture as tea and scones are in the UK, Coffee and cigarettes with France and souvlaki with Greece. They are typically eaten in the morning with breakfast and are a great way to start the day. I love my manooshé with a little bit of zaatar and plenty of cheese. Zaatar is a ground thyme mix with sumac and sesame and olive oil. It is delicious. I love stuffing mine with some tomaotes, fresh mint, cucumbers and lettuce. OH MY!

I read a blog called Taste of Beirut, and Joumana, the author of this blog simply has the most wonderful, honest fresh, lebanese cuisine on there, and this is where i got my manooshé recipe from and let me just say that i am now one of the happiest women alive! This is such a treat for me as i now dont have to go to beirut for the authemtic mini pizza. I know we have plenty of middle eastern shops around but it just not the same. Making your own is simply something else!!!!

I used Taleggio cheese for this as I didnt have anything else and it worked a treat. I called my mum to ask her if it was ok and she said yes ofcourse, as in Beirut they use all kinds of mixes to make this.

So you can find the recipe for the base here.
My mix is dried thyme and sumac blizted together then add some sesame seeds and olive oil. Sprinkle with a little salt and cover the dough.

I cooked my Manooshé in a hot oven on a baking sheet at 250 for 7 minutes and then served them straight away.

Check out Joumanas other recipes as im sure they will become a part of your dinig rituals....

Mini middle eastern pizzas huh.... They look so good. Nice not to see any tomato sauce in sight. Something to try for the weekend. Hope they turn out as good as your pictures.

I love how in the Mediterranean we can have soooo many different and yummy ways of transforming pizza. I'll have to try this. And btw, I believe Taleggio fits everywhere but maybe I'm biased :)
