Crab and Salmon Roll.... Mood = Summer entertaining

So its nearly summer, although you would not believe it living in the UK... Still cold, still raining, but nevertheless we have to make the most of it. Although i still feel like i want to eat stews and porridge, i am trying to make an effort into creating lighter healthier dishes to enjoy as my Honeymoon approaches. Bikini weather and all.....

So i had a little rummage through my fridge and made this delicious light, simple tasty concoction. Fresh white crab meat, wrapped in beautiful oak smoked salmon sitting on a bed of lettuce with a lime and chili jam sauce with a drizzle of sesame oil. A pinch of coriander, et voila. It took about 5 minutes to put together and took about 2 seconds to eat it.

I think as summer is approaching, more and more people are having dinner parties, and entertaining as their mood lifts, and this is a great way to start off an evening. Serve it as a starter and your party will be hit from the get go.The coral colour of the salmon with the dusty pink of the crab and a dash of coriander, create a great vision for your eyes.

So give it a go and let me know how it goes....

Recipe:

White crab meat
smoked salmon
Soya sauce
Sweet chili jam
Sesame oil
Coriander
Lime
Iceberg lettuce
Metal ring

Method:

  • Cut your salmon into strips and set in your metal ring until you are ready to use it.
  • Get your white crab meat mix it with some chopped coriander, sesame oil, chili jam, and lime juice and mix.
  • Place you iceberg wedge on a plate and place the ring on top.
  • Fill the ring with crab meat and gently begin to push it through so your salmon stays in tact and looks pretty.
  • You can fiddle around with it to make it more beautiful once you have pushed it through.
  • Get a couple of leaves of coriander and drizzle some sauce over the top and serve.

Perfect party entertaining. Perfect food!

My mouth was watering as I was reading your description! This sounds so good right now as the weather here is in the 90s and we are in Tshirts!

Hey Joumana, thanks. The description was not even as good as the taste. I wish we had the same weather..... But unfortunately not! You are lucky. We get a glimpse of the sun every few hours for a few seconds.... But something like this can make it shine in my kitchen at least....

Hi Janet the colour contrast was great right? But the texture and flavour contrast is evern better. The smooth soft salmon against the flaky crab and herbs was just a treat to eat and look at.
