Cod Parcel..... Mood = Thats a Wrap!

Food shopping for me is always a pleasure. I think maybe like a fashionista going to a sample sale. I get the same feeling of urgency and want, and Greed. I want to buy everything, and as i go along, getting the basics, i begin to get random things that i think i need but dont, and then i have to figure out a way of using them. I saw Cod, i saw pommegranate, i saw fennel, mint and corinader.

Then i saw PUFF PASTRY. By the way if you dont know anything about me, Puff Pastry is the main thing in my life that makes me swoon. I just cant express how much i love it. I would eat it with everything. But i dont. It is just unreal how much this makes me excited. I love it with desserts, i love it with savoury things, especially pies and parcels.

So i decied i was going to make a Cod parcel filled with all of the above. And i did. It turned out surprisingly beautiful and ever so tasty. But next time i will have to marinate the fish to get extra flavour, as my husband says " Cod is just my least favourite fish as it has NO taste EVER".

He is right.Cod is a pretty tasteless fish and marinating it before hand will give your dish an egde. And this is what i will recommend for anyone. Like i do with my Sayyadiyeh recipe.

So after my experimental dish, i have to say i was very happy with the results. You should try it. But marinate it first.


2x 250g cod
1 fennel
1 bunch mint
1 bunch of coriander
Half a pommegranate
Lemon to taste
Sherry vinegar to taste
1 teaspoon of cayenne pepper
ready made puff pastry
1 egg
Pastry brush


  • Make the marinade, by mixing lemon, sherry vinegar, salt, cayenne, pepper, mint, coriander, and salt. Plcae the cod peices into it and let it marinate for a while. About half an hour.
  • Cut the fennel into thin slices and remove the cod and set aside.
  • Place the fennel into the marinde. Add the pommegrante.
  • Roll out two peices of puff pastry with about 2 inches on each side extra around the cod.
  • Place the fennel mix on the base, the cod on top and some pommegranate on top of that. 
  • Brush the sides with egg was and begin to fold your parcels.
  • Add some more egg wash on top of the puff pastry to add extra shine while cooking.
  • Seal them well and place in a hot oven at 200 degrees for about 15 minutes, or until the pastry has gone golden brown.
  • Make some more salad using fennel, mint, coriander, lemon and cayenne pepper and set aside till your fish parcel is ready.

This is a fresh and comforting dish, maybe because of the pastry, but it has all the elements, pastry, fish, vegetables, and herbs.

Im not sure how this tastes, but just by looking at it, it is making me very very hingry. The colours are just super. I cant wait to try it. If i dont have puff pastry can i use filo?

It tasted amazing, But take note about marinating the fish first which i didnt do. I would reccomend it highly. Yes ofcourse you can use filo. It would be delicious. Try it.

This is such an elegant and delicious way of serving cod! I would try it asap, next time I find some good puff pastry; do you use your own or do you buy the ready-made ones?

Hi Joumana, i actually buy ready made Puff pastry. Life is too short to make my own...... I have done it many times before but there are some really really good ones out there. Let me know how it goes.
